It always makes me laugh that these little cheese cookies are traditionally made in the shape of a foot — such a typical German sense of humor, taking everything literally and turning it into a joke! Foot or not, they are absolutely delicious: buttery, cheesy, and so easy to make. Perfect for snacking, gifting, or adding a little fun to any holiday spread.
Ingredients:
- 150 g butter
- 180 g grated cheese (such as Gruyère, Cheddar, or a mix)
- 2 cups (250 g) all-purpose flour
- ½ cup (100 ml) heavy cream
- ½ teaspoon salt
- ½ teaspoon baking powder
- 1 egg yolk (for brushing)
- Paprika, caraway seeds, coarse salt, pepper, or other toppings for garnish
Instructions:
In a food processor, combine the butter, cheese, flour, heavy cream, salt, and baking powder. Pulse until a dough forms. Wrap the dough in plastic wrap and refrigerate for about 1 hour.
Preheat the oven to 325°F. Line two baking sheets with parchment paper.
Lightly flour a work surface and roll the dough out to about ¼ inch thickness. Cut out cookies using your favorite cookie cutters (feet, squares, or any shape you like). Gather and re-roll scraps to make more cookies. Arrange the cookies about ¾ inch apart on the prepared baking sheets.
Brush the tops with egg yolk and sprinkle with your choice of garnish.
Bake for about 15 minutes, until golden brown. Let cool slightly on the baking sheets before serving.
Store in an airtight container for up to one week.
