Rosemary Lemonade

This rosemary lemonade is one of those simple but special recipes that's perfect for summer days. I first made it on a whim, and now it’s a favorite. The rosemary gives it a subtle, herbal twist that makes it feel a little more grown-up and refreshing. It’s easy to make ahead, great for a crowd, and you can even dress it up with a splash of sparkling water or a little gin for a fun twist.

Ingredients:

  • ½ cup sugar (100 g) (small correction: ½ cup sugar is about 100 g, not 300 g)
  • 6 cups water (1.4 liters)
  • 6–8 sprigs fresh rosemary
  • ¾ cup freshly squeezed lemon juice (about 4 lemons)

Instructions:

In a saucepan, combine the sugar and 2 cups of the water. Bring to a boil, stirring until the sugar has completely dissolved.

Remove from the heat, add the rosemary sprigs, cover, and let steep for at least 30 minutes.

Strain the rosemary syrup into a pitcher. Stir in the lemon juice and the remaining 4 cups of water.

Taste and adjust with more lemon juice if desired. Chill and serve over ice.
