Chaffles

Chaffles are basically low-carb. gluten-free cheese waffles—crisp, satisfying, and made with just a handful of ingredients. They cook up beautifully in a regular waffle maker and make a great stand-in for bread. I often use them for avocado toast or even as a quick "fake" pizza base. They’re fast, versatile, and surprisingly delicious in all kinds of ways.

Ingredients (makes 2 waffles):

  • 1 egg
  • 1 tbsp almond flour or almond meal
  • 1 tsp baking powder
  • 1 cup mozzarella cheese

Instructions

In a bowl, whisk together the egg, almond flour, and baking powder until smooth.

Add the shredded mozzarella and stir until evenly coated with the mixture.

Preheat and lightly grease your waffle iron.

Spoon half the mixture into the waffle iron and spread it out evenly.

Cook until golden brown and crispy.
