Ingredients:
- 3 cloves
- 4 cardamom
- 3 black peppers
- 2 sticks of cinnamon
- fresh ginger
- 1/2 bay leave
- 5 fennel seeds
- 1 cup milk
- 1/2 cup water
- 1–2 teaspoons high-quality loose black tea (like Assam)
Instructions:
In a small saucepan, combine the milk, water, and all the spices.
Bring to a gentle simmer over low heat and let it simmer uncovered for about 20 minutes. Stir occasionally to prevent the milk from scorching.
Turn off the heat and add the black tea. Let steep for 3 minutes.
Strain the chai into a mug and sweeten to taste (honey or sugar both work well).
