Mignonette Sauce

This sauce is a classic. A handful of ingredients, a minute of chopping, and suddenly you have the perfect companion for fresh oysters.

Ingredients (makes about 1/2 cup):

  • 1/2 cup red wine vinegar or champagne vinegar
  • 4 teaspoons finely chopped shallots, rinsed
  • 1 tablespoon finely chopped fresh parsley
  • 2 teaspoons cracked black peppercorns
  • Salt, to taste

Instructions:

In a small bowl, combine all the ingredients and stir well. Serve chilled or at room temperature. The sauce will keep in the refrigerator for up to 3 days.
